Pumpkin Spiced Latte

The days are getting colder, the nights are drawing in,

We’re lighting fires to keep warm, eating chocolates from a tin.

Fancy a pumpkin spiced latte? You can make one in no time at all,

Why not share with your family as we cosy up for fall.

Cut your pumpkin in half, avoid the stem as it’s hard,

Pull out all of the pumpkin seeds, which you can disregard.

Place the pumpkin on a baking tray, with the cut side facing down,

Roast until the flesh is soft, and orange rather than brown!

Now that the pumpkin is roasted, blend the flesh until it’s smooth,

Do a mini celebration dance, to get into the groove.

Now heat milk, blended pumpkin and sugar with vanilla extract and spices too.

Combine that with strong coffee, and that’s all you have to do!

You will need:

2 cups milk (dairy or non-dairy)

2 tablespoons pumpkin puree, or more to taste

1 to 3 tablespoons sugar, depending on how sweet you like it

1 tablespoon vanilla extract

1/2 teaspoon pumpkin pie spice, plus more for serving

1/2 cup strong hot coffee

Whipped cream, for serving

(Based on 2 people snuggling up with a mug each)
